Ingredients

1 pound ground beef

1 cup pearl onions

1 ½ cups chopped carrots

1 cup chopped celery

3 cloves garlic, minced

2 tablespoons tomato paste

4 cups beef or vegetable broth

1 teaspoon dried thyme

1 bay leaf

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. In a large pot, brown the ground beef over medium heat until fully cooked and caramelized. Drain excess fat.

2. Add minced garlic, chopped celery, and tomato paste. Stir and cook for 2-3 minutes until fragrant.

3. Stir in the carrots and pearl onions, coating them in the flavor base.

4. Pour in the broth. Add thyme and bay leaf. Season with salt and pepper. Bring to a boil.

5. Reduce heat and let simmer for 25-30 minutes until veggies are tender.

6. Remove bay leaf. Taste and adjust seasoning. Serve hot.
