Ingredients
225g rigatoni pasta
2 boneless skinless chicken breasts
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp lemon zest
1 tbsp lemon juice
1 tsp salt (divided)
1/2 tsp black pepper
100g asparagus, trimmed
1 tsp harissa paste (for asparagus)
120g feta cheese
3 tbsp Greek yogurt
1 tbsp harissa paste (for sauce)
2 tbsp reserved pasta water
1 tbsp chopped fresh parsley
Instructions
1. Marinate chicken with olive oil, garlic powder, onion powder, lemon zest, and 1/2 tsp salt. Let sit for 15 minutes.
2. Grill chicken over medium-high heat for 4–5 minutes per side until fully cooked. Slice thinly and set aside.
3. Toss asparagus with olive oil, harissa paste, and 1/2 tsp salt. Roast at 425°F for 15–20 minutes until crispy.
4. Cook rigatoni in salted water per package instructions. Reserve 1/2 cup pasta water and drain.
5. Blend feta, Greek yogurt, harissa paste, lemon juice, and pasta water into a creamy sauce.
6. Toss drained pasta with the sauce until well-coated.
7. Plate pasta with grilled chicken, roasted asparagus, and a sprinkle of fresh parsley.
Notes
Be sure to blend the sauce until smooth for a creamy finish—add more pasta water if needed.
