Ingredients

2 cups rolled oats

1/2 cup almond butter (or peanut butter)

1/3 cup maple syrup or honey

Zest from 2 lemons

Juice from 1 lemon (about 2 tablespoons)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Pinch of sea salt

Optional: 2 tablespoons shredded coconut

Optional garnish: powdered sugar and extra lemon zest


Instructions

  1. In a bowl, mix almond butter, maple syrup, lemon juice, lemon zest, vanilla, and salt until smooth.
  2. Stir in oats and cinnamon. Add shredded coconut if using.
  3. Chill the mixture for 30 minutes to firm up.
