Description

These Banana Doughnuts with Chocolate Glaze are the kind of easy recipe that makes an ordinary morning feel special. Soft, moist, and full of real banana flavor, these baked doughnuts are finished with a silky chocolate glaze and a sprinkle of walnuts for the perfect mix of tender crumb, rich topping, and crunchy texture. They are a great choice for a quick breakfast, easy dessert, sweet brunch centerpiece, or homemade snack when you want fresh food ideas that feel simple but still impressive.

Ingredients

2 ripe bananas

1 1/2 cups all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1/3 cup heavy cream

1/4 cup chopped walnuts

Instructions

1. Preheat the oven to 350°F and grease a doughnut pan well.

2. Mash the bananas in a medium bowl until mostly smooth.

3. Whisk in the milk, egg, melted butter, and vanilla extract until combined.

4. In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.

5. Add the dry ingredients to the wet ingredients and stir just until no dry streaks remain.

6. Spoon or pipe the batter into the prepared doughnut pan, filling each cavity about three-quarters full.

7. Bake for 14 to 16 minutes, or until the doughnuts spring back lightly when touched.

8. Cool in the pan for 5 minutes, then transfer to a wire rack and cool completely.

9. Heat the heavy cream until hot but not boiling, then pour it over the chocolate chips.

10. Let it sit for 1 minute, then stir until smooth and glossy.

11. Dip the tops of the cooled doughnuts into the chocolate glaze.

12. Sprinkle with chopped walnuts and let the glaze set before serving.

Notes

Use very ripe bananas with plenty of brown spots for the sweetest flavor and softest texture.

Let the doughnuts cool completely before glazing so the chocolate sets nicely instead of sliding off.
