Ingredients
1 lb salmon, cut into bite-sized cubes
2 cups cooked jasmine rice
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup mayonnaise
1/4 cup sweet chili sauce
1 tablespoon sriracha
1 tablespoon honey
1 teaspoon soy sauce
1/2 cucumber, sliced
1 cup shredded carrots
1 avocado, sliced
2 green onions, sliced
2 tablespoons chopped cilantro
1 teaspoon sesame seeds
Instructions
1. Cook the jasmine rice according to the package directions and keep it warm.
2. Pat the salmon dry, then toss it with olive oil, garlic powder, paprika, salt, and black pepper.
3. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and soy sauce until smooth.
4. Heat a skillet over medium-high heat and cook the salmon for 2 to 3 minutes per side until browned and cooked through.
5. Spoon a little of the bang bang sauce over the salmon during the last minute of cooking for extra flavor.
6. Divide the warm rice among bowls.
7. Top each bowl with salmon, cucumber, shredded carrots, avocado, green onions, and cilantro.
8. Drizzle the remaining bang bang sauce over the top and finish with sesame seeds.
9. Serve right away while the salmon is warm and the vegetables are crisp.
Notes
