Ingredients

16 Biscoff cookies

8 oz mascarpone cheese

1 cup heavy whipping cream

1/2 cup powdered sugar

1 tsp vanilla extract

1/2 cup strong brewed coffee, cooled

1/3 cup Biscoff spread

1 tbsp cocoa powder

2 tbsp crushed Biscoff cookies for topping


Instructions

1. Brew the coffee and let it cool completely.

2. In a large bowl, whip the heavy cream until soft peaks form.

3. In a separate bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth.

4. Gently fold the whipped cream into the mascarpone mixture until light and fluffy.

5. Crush enough Biscoff cookies for layering, keeping a few whole or halved for garnish if desired.

6. Add a layer of crushed Biscoff cookies to the bottom of each dessert cup.

7. Lightly drizzle or spoon a little cooled coffee over the cookie layer.

8. Pipe or spoon a layer of mascarpone filling over the cookies.

9. Repeat the layers until the cups are filled, finishing with cream on top.

10. Warm the Biscoff spread slightly and drizzle it over each cup.

11. Dust with cocoa powder and sprinkle with extra crushed Biscoff cookies.

12. Chill for at least 2 hours before serving.

Notes

Do not soak the cookies too heavily or the layers can turn mushy instead of soft and balanced.
