Description

Brown Sugar Cinnamon Caramel Cookies are the kind of easy recipe that instantly feels special. Each cookie bakes up soft and chewy with a warm cinnamon sugar coating and a gooey caramel center that melts into every bite. This is one of my favorite dessert recipes for holiday baking, weekend treats, cookie platters, sweet snack ideas, and easy baking projects when I want something cozy, homemade, and seriously crowd-pleasing.


Ingredients

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

3/4 cup unsalted butter, softened

1 cup packed brown sugar

1/4 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

18 soft caramel candies, unwrapped

1/4 cup granulated sugar

1 teaspoon ground cinnamon


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.

3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and creamy.

4. Add the egg and vanilla extract, then mix until fully combined.

5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

6. Scoop about 2 tablespoons of dough and flatten it in your hand.

7. Place one soft caramel candy in the center and wrap the dough around it, sealing the edges completely.

8. In a small bowl, stir together the remaining granulated sugar and cinnamon.

9. Roll each dough ball in the cinnamon sugar mixture.

10. Place the cookies on the prepared baking sheets about 2 inches apart.

11. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are just set.

12. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack.

Notes

Seal the dough well around the caramel so it stays in the center and does not leak too much while baking.

Let the cookies rest a few minutes before eating because the caramel filling will be very hot right out of the oven.
