Ingredients
1 large head cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
8 small corn or flour tortillas
1/2 cup diced red onion
1/2 cup chopped fresh cilantro
1 lime, cut into wedges
1/2 cup sour cream
1/4 cup mayonnaise
1/2 cup fresh cilantro
2 tablespoons lime juice
1 garlic clove
2 tablespoons water or milk
1/4 teaspoon salt
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. In a large bowl, toss the cauliflower florets with olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper until evenly coated.
3. Spread the cauliflower on the baking sheet in a single layer. Roast for 25 to 30 minutes, flipping halfway through, until tender and browned on the edges.
4. While the cauliflower roasts, make the crema by blending sour cream, mayonnaise, cilantro, lime juice, garlic, water or milk, and salt until smooth.
5. Warm the tortillas in a skillet or oven until soft and pliable.
6. Fill each tortilla with roasted cauliflower, then top with diced red onion and chopped cilantro.
7. Drizzle generously with cilantro lime crema and serve with lime wedges.
Notes
Spread the cauliflower out well on the pan so it roasts instead of steaming.
For the best texture, store the crema separately and assemble the tacos just before serving.
