Description

This Cheater Chicken Pot Pie Casserole is the kind of cozy comfort food that makes an ordinary night feel a little more special. It has tender chicken, creamy sauce, classic mixed vegetables, and a golden baked topping that gives you all the flavor of a traditional pot pie without the extra fuss. I love this easy dinner for busy weeknights, family meals, and comfort food cravings because it comes together fast, bakes beautifully, and tastes like a homemade classic. It is a great option for an easy recipe, quick dinner, family dinner, comfort food casserole, weeknight meal, and one of my favorite dinner ideas when I want something hearty and satisfying.

Ingredients

3 cups cooked chicken, shredded or chopped

1 can cream of chicken soup, 10.5 ounces

1 cup sour cream

1/2 cup chicken broth

1 cup frozen peas

1 cup frozen carrots

1/2 cup onion, finely chopped

1 teaspoon garlic powder

1/2 teaspoon black pepper

1 can refrigerated biscuit dough, 16.3 ounces

2 tablespoons butter, melted

Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. In a large mixing bowl, stir together the cream of chicken soup, sour cream, chicken broth, onion, garlic powder, and black pepper until smooth.

3. Fold in the cooked chicken, peas, and carrots until everything is evenly coated.

4. Spread the mixture into the prepared baking dish in an even layer.

5. Arrange the biscuit dough over the top of the casserole.

6. Brush the biscuit topping with melted butter.

7. Bake for 30 to 35 minutes, until the topping is golden brown and the filling is bubbling.

8. Let the casserole rest for 5 to 10 minutes before serving.

Notes

Let the casserole rest before serving so the creamy filling can settle and scoop more cleanly.

If the topping starts browning too quickly, loosely cover the dish with foil for the last 10 minutes of baking.
