1/2 cup all-purpose flour
1/3 cup brown sugar
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, melted
Instructions
1. Preheat the oven to 375°F and line a 12-cup muffin pan with paper liners.
2. In a small bowl, stir together the streusel flour, brown sugar, granulated sugar, cinnamon, and melted butter until crumbly. Set aside.
3. In a large bowl, whisk together 2 cups flour, 3/4 cup granulated sugar, baking powder, and salt.
4. In a separate bowl, whisk the eggs, 1/2 cup melted butter, milk, and vanilla extract until smooth.
5. Pour the wet ingredients into the dry ingredients and stir just until combined.
6. Gently fold in about 1 cup of the cherry pie filling, saving the rest for the tops.
7. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
8. Spoon a little of the remaining cherry pie filling over each muffin.
9. Sprinkle the streusel topping generously over the muffins.
10. Bake for 20 to 24 minutes, until the tops are golden and a toothpick inserted into the muffin part comes out mostly clean.
11. Cool the muffins in the pan for 10 minutes, then transfer to a wire rack.
Notes
