Ingredients
1 lb chicken breast, sliced into thin strips
1 cup long-grain rice
1 red bell pepper, sliced
1 green bell pepper, sliced
1 medium onion, sliced
3 cloves garlic, minced
2 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
2 cups chicken broth
1 cup diced tomatoes
1 tablespoon lime juice
1/4 cup fresh cilantro, chopped
Instructions
1. Toss the sliced chicken with chili powder, cumin, smoked paprika, oregano, salt, and black pepper until evenly coated.
2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat and cook the chicken until lightly browned and nearly cooked through. Remove and set aside if needed.
3. Add the remaining olive oil, then cook the sliced bell peppers and onion until softened but still slightly crisp.
4. Stir in the garlic and rice, and cook for 1 to 2 minutes to lightly toast the rice.
5. Pour in the chicken broth and diced tomatoes, then stir well to combine.
6. Return the chicken to the skillet, reduce the heat to low, cover, and simmer for 18 to 20 minutes or until the rice is tender and the liquid is absorbed.
7. Remove from heat, stir in the lime juice, and sprinkle the cilantro over the top.
8. Fluff gently and serve hot.
Notes
Do not overcrowd the pan when cooking the chicken or it will steam instead of browning.
Add a splash of broth when reheating leftovers to keep the rice soft and flavorful.
