Ingredients

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup packed brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

3/4 cup buttermilk

1/4 cup brewed coffee, cooled

For the coffee filling:

1/2 cup unsalted butter, softened

2 1/2 cups powdered sugar

2 teaspoons instant espresso powder

1 teaspoon vanilla extract

2 tablespoons heavy cream


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

3. In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.

4. Add the egg and vanilla extract, then beat until smooth.

5. In a small measuring cup, stir together the buttermilk and cooled coffee.

6. Add the dry ingredients to the butter mixture in batches, alternating with the buttermilk mixture, and mix just until combined.

7. Scoop the batter into even rounds on the prepared baking sheets, spacing them apart.

8. Bake for 9 to 11 minutes, until the tops spring back lightly when touched. Cool completely.

9. For the filling, beat the butter until creamy, then add the powdered sugar, espresso powder, vanilla extract, and heavy cream. Beat until fluffy and smooth.

10. Match the cooled cakes by size. Pipe or spread the filling onto the flat side of half the cakes, then top with the remaining cakes.

11. Chill for 15 to 20 minutes before serving for the best texture.

Notes

Use room temperature butter for both the cakes and filling so everything mixes smoothly and evenly.

Let the chocolate cakes cool completely before filling, or the coffee cream will soften too much and slide out.
