Ingredients
24 chocolate sandwich cookies, finely crushed
5 tablespoons unsalted butter, melted
3/4 cup unsalted butter, softened
1 cup granulated sugar
4 ounces bittersweet chocolate, melted and slightly cooled
1 teaspoon vanilla extract
3 large eggs
1 cup heavy whipping cream
2 tablespoons powdered sugar
2 ounces dark chocolate, shaved or chopped
Instructions
1. Preheat the oven to 350°F. Combine the crushed chocolate sandwich cookies with the 5 tablespoons melted butter until evenly moistened. Press the mixture firmly into the bottom and sides of a 9 inch pie dish. Bake for 8 minutes, then cool completely.
2. In a large mixing bowl, beat the softened 3/4 cup butter and granulated sugar for 3 to 4 minutes until pale and fluffy.
3. Add the melted bittersweet chocolate and vanilla extract, then beat until smooth.
4. Add the eggs one at a time, beating for 2 minutes after each addition so the filling becomes silky and light.
5. Spread the chocolate filling into the cooled crust and smooth the top. Refrigerate for at least 4 hours, or until fully set.
6. In a chilled bowl, beat the heavy whipping cream and powdered sugar until soft to medium peaks form.
7. Spoon or spread the whipped cream over the chilled pie, then finish with shaved dark chocolate.
8. Slice and serve cold.
Notes
Use room temperature butter for the filling so it whips up light and smooth without lumps.
