Classic Green Beans Almondine

What I love most is the contrast in every bite. The green beans stay tender with a little snap, the almonds bring a toasted crunch, and the buttery garlic and lemon tie everything together in the most inviting way. It is a beautiful holiday side, but I make it just as often for a weeknight dinner because it always feels fresh and effortless.

What Makes Classic Green Beans Almondine So Good?

For me, the magic of Classic Green Beans Almondine is in its balance. It tastes light and fresh, yet still rich enough to sit next to roast chicken, steak, or a big holiday spread. The almonds add texture, the butter adds depth, and the lemon keeps everything from feeling too heavy.

Another reason I love this dish is how fast it comes together. Once the beans are trimmed, the rest of the cooking moves quickly. That makes it perfect when I need a reliable side dish that looks polished on the table without turning into a complicated project.

Ingredients for the Classic Green Beans Almondine

The beauty of this dish is that each ingredient has a clear purpose. Nothing feels extra, and every part helps build that classic flavor and texture.

Fresh green beans

Fresh green beans are the heart of the dish. I like them because they stay vibrant and slightly crisp after cooking, which gives this side its signature bite and bright color.

Sliced almonds

Sliced almonds bring the nutty crunch that makes almondine so special. Toasting them wakes up their flavor and gives the finished dish a delicate, golden finish.

Butter

Butter creates the rich base that coats the beans and carries the flavor of the garlic and almonds. It is what gives the dish its classic comforting feel.

Olive oil

A little olive oil helps the butter cook more smoothly and keeps the almonds from browning too fast. I like using both for a balanced flavor.

Shallot

Shallot adds a gentle sweetness and subtle savory depth. It blends into the butter without overpowering the fresh beans.

Garlic

Garlic gives the dish warmth and aroma. Just a small amount makes the whole pan smell incredible and adds a deeper layer of flavor.

Lemon juice

Lemon juice brightens the buttery base and keeps the side dish tasting fresh. It also brings out the natural flavor of the green beans.

Lemon zest

A little zest gives the dish a more vibrant citrus note. I love how it lifts everything without making the beans taste too sharp.

Kosher salt

Salt is essential here because it wakes up the flavor of the beans, almonds, butter, and lemon all at once.

Black pepper

Black pepper adds a mild bite that rounds out the buttery and nutty flavors.

How To Make the Classic Green Beans Almondine

This is a quick side dish, but I like to move through it in order so every part tastes just right. The beans should stay bright, the almonds should be golden, and the buttery finish should coat everything lightly.

Step 1: Blanch the Green Beans

Bring a large pot of salted water to a boil and add the trimmed green beans. Cook them for just a few minutes until they turn bright green and become crisp-tender. Drain them, then transfer them to ice water to stop the cooking and keep that fresh color.

Step 2: Toast the Almonds

In a large skillet over medium heat, add the sliced almonds and cook them until lightly golden and fragrant. Stir often so they toast evenly and do not burn. Once done, move them to a plate for a moment.

Step 3: Build the Buttery Base

In the same skillet, add the butter and olive oil. Stir in the shallot and cook until softened, then add the garlic and cook just until fragrant. This quick layer of flavor is what gives the whole dish its depth.

Step 4: Toss the Beans

Add the blanched green beans to the skillet and toss them in the buttery shallot mixture until they are warmed through and glossy. Season with salt and black pepper so the flavor reaches every bite.

Step 5: Finish with Lemon and Almonds

Add the toasted almonds back to the skillet, then finish with lemon juice and lemon zest. Toss everything together one last time and serve right away while the almonds are still crisp and the beans are warm.

Serving and Storing Classic Green Beans Almondine

I like serving this dish straight from the skillet or poured onto a platter while it is still warm and shiny. It fits in beautifully beside roasted meats, baked chicken, fish, or holiday mains. The bright green color and toasted almonds make it feel especially nice for gatherings.

If I have leftovers, I store them in an airtight container in the refrigerator for up to 3 days. To reheat, I warm them gently in a skillet so the beans stay tender and the flavors wake back up. The almonds soften a bit over time, so for the best texture I sometimes toast a few extra almonds and add them fresh before serving again.

What to Serve With Classic Green Beans Almondine?

Roast Chicken

The buttery almonds and lemony beans pair beautifully with juicy roast chicken. It is a simple, classic dinner combination that always feels balanced.

Garlic Butter Salmon

I love these beans with salmon because the fresh lemon notes work so well with rich, flaky fish. It makes the whole plate feel light but satisfying.

Holiday Ham

Classic Green Beans Almondine belongs on a holiday table. The fresh beans cut through the richness of ham and give the meal a little brightness.

Steak and Mashed Potatoes

When I want a steakhouse-style dinner at home, this is one of my favorite sides. The almonds add just enough crunch to contrast with tender steak and creamy potatoes.

Description

Classic Green Beans Almondine is the kind of side dish that makes any table feel a little more special without adding extra stress in the kitchen. Crisp-tender green beans, buttery toasted almonds, garlic, shallot, and bright lemon come together in a fresh and flavorful way that works for holiday meals, easy dinner nights, and elegant entertaining. It is a quick side dish, an easy recipe, and one of my favorite food ideas when I want a healthy snack-style veggie side or simple dinner ideas that still feel classic.

Ingredients

1 pound fresh green beans, trimmed

3 tablespoons unsalted butter

1 tablespoon olive oil

1/3 cup sliced almonds

1 small shallot, finely chopped

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

Instructions

1. Bring a large pot of salted water to a boil. Add the green beans and cook for 3 to 4 minutes until bright green and crisp-tender.

2. Drain the beans and transfer them to a bowl of ice water to stop the cooking. Drain again and set aside.

3. In a large skillet over medium heat, toast the sliced almonds for 2 to 3 minutes, stirring often, until lightly golden. Transfer them to a plate.

4. In the same skillet, melt the butter with the olive oil. Add the shallot and cook for 2 minutes until softened.

5. Stir in the garlic and cook for 30 seconds until fragrant.

6. Add the green beans to the skillet and toss for 2 to 3 minutes until heated through and coated well.

7. Stir in the lemon juice, lemon zest, salt, and black pepper.

8. Add the toasted almonds back to the skillet, toss gently, and serve warm.

Notes

Toast the almonds carefully and stir often because they can go from golden to burnt very quickly.

For the freshest texture, blanch the green beans just until crisp-tender so they keep their bright color and slight snap.
