Classic Green Beans Almondine is the kind of side dish that makes any table feel a little more special without adding extra stress in the kitchen. Crisp-tender green beans, buttery toasted almonds, garlic, shallot, and bright lemon come together in a fresh and flavorful way that works for holiday meals, easy dinner nights, and elegant entertaining. Ingredients
1 pound fresh green beans, trimmed
3 tablespoons unsalted butter
1 tablespoon olive oil
1/3 cup sliced almonds
1 small shallot, finely chopped
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
1. Bring a large pot of salted water to a boil. Add the green beans and cook for 3 to 4 minutes until bright green and crisp-tender.
2. Drain the beans and transfer them to a bowl of ice water to stop the cooking. Drain again and set aside.
3. In a large skillet over medium heat, toast the sliced almonds for 2 to 3 minutes, stirring often, until lightly golden. Transfer them to a plate.
4. In the same skillet, melt the butter with the olive oil. Add the shallot and cook for 2 minutes until softened.
5. Stir in the garlic and cook for 30 seconds until fragrant.
6. Add the green beans to the skillet and toss for 2 to 3 minutes until heated through and coated well.
7. Stir in the lemon juice, lemon zest, salt, and black pepper.
8. Add the toasted almonds back to the skillet, toss gently, and serve warm.
Notes
Toast the almonds carefully and stir often because they can go from golden to burnt very quickly.
For the freshest texture, blanch the green beans just until crisp-tender so they keep their bright color and slight snap.
