Ingredients
2 large boneless skinless chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
4 slices provolone cheese
1/2 cup grated Parmesan cheese
1/4 cup ranch dressing
1/4 cup mayonnaise
1/2 cup panko breadcrumbs
2 tablespoons melted butter
1 tablespoon chopped fresh parsley
Instructions
1. Slice the chicken breasts in half lengthwise to make 4 thinner cutlets, or pound them to even thickness.
2. Season both sides of the chicken with salt, black pepper, and garlic powder.
3. Heat olive oil in a large skillet over medium heat.
4. Sear the chicken for 4 to 5 minutes per side until golden and nearly cooked through.
5. Transfer the chicken to a baking dish or oven-safe pan.
6. In a small bowl, mix Parmesan cheese, ranch dressing, mayonnaise, panko breadcrumbs, and melted butter until combined.
7. Top each piece of chicken with a slice of provolone cheese.
8. Spoon the Parmesan topping evenly over each piece.
9. Broil for 2 to 4 minutes until the cheese is melted and the topping is golden brown and crisp.
10. Sprinkle with chopped parsley and serve hot.
Notes
Use evenly sized chicken cutlets so they cook at the same rate and stay juicy.
Watch the broiler closely because the Parmesan topping browns very quickly.
