Ingredients
1 lb asparagus, trimmed
1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Asiago cheese
1/4 cup grated Parmesan cheese
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil or olive oil spray
1 tbsp chopped fresh parsley
1 lemon, cut into wedges
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Wash the asparagus, trim the tough ends, and pat the spears dry.
3. Place the flour in one shallow bowl. Beat the eggs in a second bowl.
4. In a third bowl, combine the panko breadcrumbs, Asiago cheese, Parmesan cheese, garlic powder, salt, and black pepper.
5. Dredge each asparagus spear in the flour, then dip it into the egg, then press it into the breadcrumb mixture until evenly coated.
6. Arrange the coated asparagus spears in a single layer on the prepared baking sheet.
7. Lightly drizzle with olive oil or spray with olive oil spray.
8. Bake for 12 to 15 minutes, or until the asparagus is tender and the coating is golden brown and crisp.
9. Remove from the oven and sprinkle with chopped parsley.
10. Serve hot with lemon wedges on the side.
Notes
For the crispiest coating, make sure the asparagus is completely dry before breading. Excess moisture can keep the crust from sticking well.
Thicker asparagus works best for this recipe because it stays tender inside while the outside turns golden and crunchy.
