Description

Crisp, cool, and wonderfully creamy, these Cucumber Bites with Cream Cheese Filling are the kind of easy recipe I love when I need a quick breakfast bite, a healthy snack, a light lunch addition, or elegant food ideas for parties and brunch tables. Thin cucumber layers and soft herbed cream cheese come together in a fresh, simple appetizer that looks beautiful and tastes even better. Whether you are searching for easy appetizer ideas, tea party food, no-fuss entertaining recipes, or refreshing cucumber snacks, this one checks every box with minimal effort and big flavor.

Ingredients

8 ounces cream cheese, softened

2 tablespoons fresh dill, finely chopped

1 tablespoon fresh chives, finely chopped

1 teaspoon lemon juice

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/8 teaspoon black pepper

1 large cucumber, thinly sliced

8 slices soft white bread

Instructions

1. In a medium bowl, mix the softened cream cheese, dill, chives, lemon juice, garlic powder, salt, and black pepper until smooth and well combined.

2. Wash the cucumber and slice it thinly. Pat the slices dry with paper towels to remove extra moisture.

3. Trim the crusts from the bread slices for a cleaner tea sandwich look.

4. Spread an even layer of the cream cheese filling over 4 slices of bread.

5. Arrange the cucumber slices over the filling in slightly overlapping layers.

6. Top with the remaining bread slices and press gently.

7. Cut each sandwich into 4 triangles or small squares to make bite-sized pieces.

8. Chill briefly before serving for the freshest texture and flavor.

Notes

Use softened cream cheese so the filling mixes smoothly and spreads without tearing the bread.

Pat the cucumber dry before assembling so the bites stay neat and the bread does not become soggy too quickly.
