Ingredients

2 sheets puff pastry, thawed

8 ounces cream cheese, softened

1/4 cup granulated sugar

1 teaspoon vanilla extract

2 medium apples, peeled and diced

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 teaspoon cornstarch

1 egg, beaten

1 cup powdered sugar

2 tablespoons milk


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. In a medium bowl, mix the cream cheese, granulated sugar, and vanilla extract until smooth.

3. In a small skillet over medium heat, cook the diced apples with brown sugar, cinnamon, lemon juice, and cornstarch for 4 to 5 minutes, until slightly softened and glossy. Let the mixture cool.

4. Unfold the puff pastry sheets and cut each sheet into 4 equal squares for a total of 8 danishes.

5. Lightly score a border around each square, leaving about 1/2 inch around the edges.

6. Spoon the cream cheese filling into the center of each square, then top with a spoonful of the apple mixture.

7. Brush the outer edges with beaten egg.

8. Bake for 18 to 22 minutes, or until the pastries are puffed and deeply golden brown.

9. Whisk the powdered sugar and milk together until smooth, then drizzle over the slightly cooled danishes.

10. Serve warm or at room temperature.

Notes

Use cold but workable puff pastry so the layers stay flaky in the oven.
