Ingredients

1 head cauliflower, cut into florets

2 tablespoons butter

1 medium yellow onion, chopped

3 cloves garlic, minced

2 tablespoons all-purpose flour

4 cups chicken broth

1 cup whole milk

1 cup heavy cream

2 cups cooked shredded chicken

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes

1 tablespoon fresh thyme or basil, chopped

1 tablespoon olive oil for drizzling


Instructions

1. Melt the butter in a large pot over medium heat. Add the chopped onion and cook for 4 to 5 minutes until softened. Stir in the garlic and cook for 30 seconds.

2. Sprinkle in the flour and stir well for 1 minute to create a light roux.

3. Slowly pour in the chicken broth while stirring until smooth.

4. Add the cauliflower, salt, black pepper, and red pepper flakes. Bring to a gentle simmer and cook for 15 to 18 minutes, until the cauliflower is very tender.

5. Stir in the milk, heavy cream, and shredded chicken. Simmer gently for 5 minutes.

6. Blend part of the soup with an immersion blender for a creamy texture, leaving some chunks for body.

7. Taste and adjust seasoning if needed.

8. Serve hot with fresh thyme or basil and a drizzle of olive oil.

Notes

For the best texture, blend only part of the soup so it stays creamy but still has hearty bites of cauliflower and chicken.

Reheat the soup gently over low heat and add a splash of broth or milk if it thickens too much in the fridge.
