Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

6 tablespoons unsalted butter, melted

16 ounces cream cheese, softened

1/2 cup granulated sugar

1/2 cup sour cream

2 large eggs

1 teaspoon vanilla extract

1/8 teaspoon salt

1/3 cup rainbow sprinkles

Instructions

1. Preheat the oven to 325°F and line an 8×8-inch baking pan with parchment paper.

2. In a medium bowl, mix the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until the texture resembles wet sand.

3. Press the crust mixture firmly into the bottom of the prepared pan.

4. In a large bowl, beat the softened cream cheese until completely smooth.

5. Add the 1/2 cup granulated sugar, sour cream, vanilla extract, and salt, then mix until creamy.

6. Add the eggs one at a time, mixing on low speed just until combined after each addition.

7. Gently fold in the rainbow sprinkles.

8. Pour the cheesecake filling over the crust and smooth the top.

9. Bake for 30 to 35 minutes, or until the edges are set and the center has a slight jiggle.

10. Cool the bars to room temperature, then refrigerate for at least 4 hours.

11. Lift the chilled cheesecake out of the pan, slice into bars, and serve cold.

Notes

Use room temperature cream cheese for the smoothest filling and to avoid lumps.

Fold in the sprinkles gently at the end so the colors stay bright and do not bleed too much into the batter.
