Ingredients

2 pounds carrots, peeled and sliced diagonally

2 tablespoons butter

1 tablespoon olive oil

3 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Peel the carrots and slice them diagonally into even pieces.

2. Heat the butter and olive oil in a large skillet over medium heat.

3. Add the carrots, salt, and black pepper, then sauté for 10 to 12 minutes, stirring often, until the carrots are tender.

4. Stir in the minced garlic and cook for 30 seconds, just until fragrant.

5. Remove the skillet from the heat and toss the carrots with the fresh parsley and dill.

6. Transfer to a serving dish and spoon the buttery herb mixture over the top before serving warm.

Notes

Use carrots sliced to a similar thickness so they cook evenly and stay tender without turning mushy.

Add the garlic near the end of cooking so it stays fragrant and does not brown too much.
