1 cup unsalted butter, melted
1 cup granulated sugar

1 teaspoon ground cinnamon
1/4 cup granulated sugar
1 1/2 teaspoons ground cinnamon
Instructions
1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
3. Add the eggs and vanilla extract, then whisk until fully combined.
4. Stir in the flour, baking powder, salt, and 1 teaspoon cinnamon until no dry streaks remain.
5. Spread the thick batter evenly into the prepared baking pan.
6. In a small bowl, mix the topping sugar and 1 1/2 teaspoons cinnamon.
7. Sprinkle the cinnamon sugar mixture evenly over the batter.
8. Bake for 24 to 28 minutes, until the edges are lightly golden and the center is just set.
9. Cool completely in the pan before lifting out and slicing into 16 squares.
Notes
Do not overmix the batter once the flour goes in or the blondies can turn dense instead of soft.
For the best texture, pull them from the oven when the center is just set. They will finish firming up as they cool.
