Ingredients
2 medium cucumbers
3 medium carrots
3 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon honey
1 garlic clove, minced
1 tablespoon sesame seeds
2 tablespoons fresh parsley, chopped
1/4 teaspoon salt
Instructions
1. Wash the cucumbers and carrots well.
2. Slice the cucumbers into thin rounds or half moons.
3. Peel the carrots and julienne or shred them into thin strips.
4. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, minced garlic, and salt.
5. Add the cucumbers and carrots to a large mixing bowl.
