Ingredients

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

3/4 cup cherry pie filling, chopped slightly if needed

1 1/2 cups powdered sugar

2 to 3 tablespoons milk

2 tablespoons pink and red sprinkles


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.

4. Mix in the egg and vanilla extract until fully combined.

5. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.

6. Scoop about 2 tablespoons of dough and flatten it in your hand.

7. Add about 1 teaspoon of cherry pie filling to the center of the dough.

8. Top with a little more dough or fold the dough around the filling, then pinch the edges closed and roll gently into a ball.

9. Place the stuffed dough balls on the prepared baking sheets, spacing them about 2 inches apart.

10. Bake for 12 to 15 minutes, until the edges are set and lightly golden.

11. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

12. In a small bowl, whisk together the powdered sugar and milk until smooth.

13. Drizzle the glaze over the cooled cookies and immediately add the sprinkles.

14. Let the glaze set before serving or storing.

Notes

Use mostly cherries and not too much extra syrup when filling the cookies, or they can be harder to seal.

Let the cookies cool completely before glazing so the icing stays thick and pretty on top.
