Ingredients

1 box chocolate cake mix

1 box instant chocolate pudding mix, 3.9 ounces

4 large eggs

1 cup sour cream

1/2 cup vegetable oil

1/2 cup milk

1 teaspoon vanilla extract

1 cup unsalted butter, softened

4 cups powdered sugar

2 to 3 tablespoons heavy cream

1 teaspoon vanilla extract or Irish cream flavoring

green and white sprinkles


Instructions

1. Preheat the oven to 350°F and line a 12-cup muffin pan with cupcake liners.

2. In a large bowl, beat together the chocolate cake mix, chocolate pudding mix, eggs, sour cream, vegetable oil, milk, and vanilla extract until smooth.

3. Fill each cupcake liner about two-thirds full with batter.

4. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

5. Let the cupcakes cool in the pan for 5 minutes, then transfer them to a wire rack and cool completely.

6. In a separate bowl, beat the softened butter until creamy.

7. Gradually mix in the powdered sugar.

8. Add the heavy cream and vanilla extract or Irish cream flavoring, then beat until the frosting is light and fluffy.

9. Pipe or spread frosting onto the cooled cupcakes.

10. Finish with green and white sprinkles before serving.

Notes

For the best frosting texture, make sure the cupcakes are fully cooled before decorating.

If you want a richer flavor, use whole milk in the batter and heavy cream in the frosting.
