Ingredients

6 large yellow onions, thinly sliced

3 tablespoons unsalted butter

1 tablespoon olive oil

3 cloves garlic, minced

1 tablespoon all-purpose flour

1/2 cup dry white wine

8 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon fresh thyme leaves

1 bay leaf

1 teaspoon kosher salt

1/2 teaspoon black pepper

8 slices baguette

2 cups shredded Gruyère cheese

1/2 cup grated Parmesan cheese


Instructions

1. Heat the butter and olive oil in a large heavy pot over medium heat. Add the sliced onions and salt, then cook for 30 to 35 minutes, stirring often, until the onions are soft, deep golden, and caramelized.

2. Stir in the minced garlic and cook for 1 minute until fragrant. Sprinkle in the flour and stir well for another minute.

3. Pour in the white wine and scrape up any browned bits from the bottom of the pot. Let it cook for 2 to 3 minutes.

4. Add the beef broth, Worcestershire sauce, thyme, bay leaf, and black pepper. Bring to a gentle simmer and cook for 15 minutes. Taste and adjust salt if needed.

5. While the soup simmers, toast the baguette slices until crisp and golden.

6. Ladle the hot soup into oven-safe bowls. Top each bowl with toasted baguette slices, then divide the Gruyère and Parmesan over the top.

7. Place the bowls under the broiler for 2 to 4 minutes, just until the cheese is melted, bubbling, and lightly browned. Serve immediately.

Notes

Do not rush the onions. Their deep golden color creates the sweet, rich flavor that makes this soup taste like it simmered for hours.

Keep the bread toasted before topping the soup so it holds its texture better under the broth and melted cheese.
