8 large eggs

1 1/2 cups cottage cheese

1/2 cup milk

1 tablespoon all-purpose flour

1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1/8 teaspoon red pepper flakes


Instructions

1. Preheat the oven to 375°F and grease an 8-inch square baking dish or similar casserole dish.

2. Heat the olive oil in a skillet over medium heat, then cook the onion for 3 to 4 minutes until softened.
