Ingredients

1 lb fresh green beans, trimmed

1/2 cup all-purpose flour

2 large eggs

1 1/2 cups panko breadcrumbs

1/2 cup grated parmesan cheese

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp paprika

vegetable oil, for frying

1/2 cup ranch dressing or garlic aioli, for serving


Instructions

1. Wash the green beans, trim the ends, and pat them very dry with paper towels.

2. Place the flour in one shallow bowl. Beat the eggs in a second bowl. In a third bowl, mix the panko breadcrumbs, parmesan cheese, garlic powder, onion powder, salt, black pepper, and paprika.

3. Dip each green bean into the flour, then into the eggs, then coat it in the breadcrumb mixture. Press lightly so the coating sticks well.

4. Heat 2 to 3 inches of vegetable oil in a deep skillet or saucepan to 350°F.

5. Fry the green beans in small batches for 2 to 3 minutes, turning as needed, until golden brown and crisp.

6. Transfer the fried green beans to a paper towel-lined plate or a wire rack.

7. Serve immediately with ranch dressing or garlic aioli.

Notes

For the crispiest coating, make sure the green beans are completely dry before breading them.

Fry in small batches so the oil temperature stays steady and the coating gets evenly golden.
