Description

These glazed mixed berry scones are the kind of easy recipe that makes any morning feel a little more special. Tender, buttery, and filled with bursts of juicy berries, they bake up with golden edges and a soft center, then get finished with a sweet vanilla glaze that makes them perfect for brunch, breakfast ideas, a quick breakfast treat, or a cozy snack with coffee. If you are looking for homemade food ideas that feel bakery-style without being difficult, this mixed berry scone recipe is a simple and delicious choice.

Ingredients

2 cups all-purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1/2 cup heavy cream

1 large egg

1 teaspoon vanilla extract

3/4 cup blueberries

1/2 cup raspberries

1 cup powdered sugar

2 tablespoons milk or heavy cream

Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.

3. Add the cold cubed butter and cut it into the flour mixture until coarse crumbs form.

4. In a small bowl, whisk together the heavy cream, egg, and vanilla extract.

5. Pour the wet mixture into the dry ingredients and stir gently until a shaggy dough starts to form.

6. Fold in the blueberries and raspberries carefully so they do not break apart too much.

7. Turn the dough onto a lightly floured surface and gently pat it into a 1-inch thick round disk.

8. Cut the dough into 8 wedges and place them on the prepared baking sheet.

9. Bake for 18 to 22 minutes, until the tops are lightly golden.

10. Let the scones cool for 10 minutes.

11. Whisk together the powdered sugar and milk or cream until smooth.

12. Drizzle the glaze over the scones and let it set before serving.

Notes

Do not overwork the dough or the scones can turn dense instead of tender and flaky.
