Ingredients
1 lb large shrimp, peeled and deveined
2 cups fresh pineapple chunks
1/2 medium red onion, cut into chunks
2 tbsp olive oil
3 cloves garlic, minced
1 tsp smoked paprika
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped fresh cilantro
1 lime, cut into wedges
Instructions
1. If using wooden skewers, soak them in water for 20 to 30 minutes.
2. In a large bowl, toss the shrimp with olive oil, garlic, smoked paprika, chili powder, salt, and black pepper until evenly coated.
3. Thread the shrimp, pineapple chunks, and red onion onto skewers, alternating the pieces.
