Ingredients
1 lb ground turkey
2 cups cooked jasmine rice
1 tablespoon olive oil
3 cloves garlic, minced
1 teaspoon fresh ginger, minced
3 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon honey
1 cup shredded carrots
1 cucumber, thinly sliced
1 avocado, sliced
2 green onions, sliced
1 tablespoon sesame seeds
1/3 cup mayonnaise
1 tablespoon sriracha
1 teaspoon lime juice
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Cook the jasmine rice according to package directions and keep warm.
2. In a small bowl, stir together the mayonnaise, sriracha, and lime juice until smooth. Set aside.
3. Heat the olive oil in a large skillet over medium heat.
4. Add the ground turkey and cook for 6 to 8 minutes, breaking it up as it browns.
5. Stir in the garlic, ginger, soy sauce, sesame oil, honey, salt, and black pepper. Cook for 2 to 3 minutes more until the turkey is fully cooked and glossy.
6. Divide the cooked rice among 4 bowls.
7. Top each bowl with the ground turkey, shredded carrots, sliced cucumber, and avocado.
8. Drizzle with the spicy mayo and finish with green onions and sesame seeds.
9. Serve right away while the turkey is warm and the vegetables are fresh.
Notes
Use freshly cooked rice or day-old rice that has been reheated so the bowls stay fluffy instead of dry.
Slice the avocado just before serving to keep it fresh and bright.
