Ingredients
10 cups popped popcorn
1 cup white chocolate chips
1 cup red candy melts
3 tablespoons unsalted butter
3 tablespoons red velvet cake mix
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
1. Pop the popcorn and place it in a very large bowl, removing any unpopped kernels.
2. Add the white chocolate chips, red candy melts, and butter to a microwave-safe bowl.
3. Microwave in 20-second intervals, stirring after each one, until the mixture is fully melted and smooth.
4. Stir in the vanilla extract and salt.
5. Whisk in the red velvet cake mix until the coating is glossy and evenly combined.
6. Drizzle the red coating over the popcorn a little at a time while gently folding to coat the popcorn evenly.
7. Spread the coated popcorn onto a parchment-lined baking sheet.
8. Let it sit at room temperature until set, or chill briefly to help it firm up faster.
9. Break into clusters and serve.
Notes
Use freshly popped popcorn and remove every unpopped kernel before coating so the finished snack stays light and easy to eat.
