Ingredients
1 large yellow bell pepper
1/2 pound ground beef
1 cup cooked white rice
1/4 cup diced onion
2 cloves garlic
1/2 cup tomato sauce
1/4 cup diced tomatoes
1/2 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
1 tablespoon chopped fresh parsley
Instructions
1. Preheat the oven to 375°F and lightly grease a small baking dish.
2. Place the bell pepper halves cut side up in the baking dish.
3. In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft.
4. Add the minced garlic and cook for 30 seconds.
5. Drain any excess grease from the skillet.
6. Stir in the cooked rice, tomato sauce, diced tomatoes, Italian seasoning, salt, and black pepper.
7. Cook for 2 to 3 minutes, stirring, until the filling is hot and well combined.
8. Spoon the filling evenly into the pepper halves.
9. Top each stuffed pepper with mozzarella cheese and Parmesan cheese.
10. Cover loosely with foil and bake for 25 minutes.
11. Remove the foil and bake for 8 to 10 minutes more, until the cheese is melted and the peppers are tender.
12. Sprinkle with chopped parsley and serve warm.
Notes
For softer peppers, bake the empty pepper halves for 10 minutes before filling them.
Cooked brown rice can be used instead of white rice if you want a heartier texture and a little more fiber.
