Ingredients

4 large yellow onions, thinly sliced

8 cups beef broth

4 sprigs fresh thyme

1 bay leaf

1 teaspoon salt

1/2 teaspoon black pepper

8 slices baguette

2 cups shredded Gruyère cheese

1/4 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley


Instructions

1. Heat the butter and olive oil in a large pot or oven-safe skillet over medium heat.

2. Add the sliced onions and salt, then cook slowly for 35 to 45 minutes, stirring often, until the onions are very soft and deeply caramelized.

3. Stir in the garlic and cook for 30 seconds until fragrant.

4. Sprinkle the flour over the onions and stir well for 1 minute.

5. Slowly pour in the beef broth while stirring.

6. Add the Worcestershire sauce, thyme, bay leaf, and black pepper.

7. Bring the soup to a gentle simmer and cook for 20 minutes. Remove the bay leaf and thyme stems.

8. While the soup simmers, toast the baguette slices until golden and crisp.

9. Ladle the soup into oven-safe bowls, top each with toasted baguette slices, Gruyère, and Parmesan.

10. Broil for 2 to 4 minutes until the cheese is melted, bubbly, and golden.

11. Sprinkle with fresh parsley and serve immediately.
