Ingredients

1 pound ground beef

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 packet taco seasoning, 1 ounce

1/3 cup water

1 cup refried beans

1 cup cooked white rice

1/2 cup sour cream

1/2 teaspoon salt

1/4 teaspoon black pepper

4 large flour tortillas

2 cups red enchilada sauce

1 1/2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

2 tablespoons chopped fresh cilantro


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. Heat the olive oil in a large skillet over medium heat, then cook the diced onion until softened, about 3 to 4 minutes.

3. Stir in the garlic and cook for 30 seconds.

4. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease.

5. Stir in the taco seasoning and water, then simmer for 2 minutes.

6. Mix in the refried beans, cooked rice, sour cream, salt, and black pepper until fully combined.

7. Spoon the filling evenly into the flour tortillas, roll them tightly, and place them seam-side down in the prepared baking dish.

8. Pour the enchilada sauce over the burritos.

9. Sprinkle the cheddar cheese and Monterey Jack cheese evenly over the top.
