Ingredients

2 tablespoons green tea leaves

4 cups water

1/8 teaspoon baking soda

2 cups ice-cold water

3 cups whole milk

1/4 teaspoon salt

2 to 3 teaspoons sugar

4 green cardamom pods, lightly crushed

2 tablespoons pistachios, chopped

2 tablespoons almonds, chopped


Instructions

1. Add the green tea leaves, 4 cups water, crushed cardamom pods, and baking soda to a saucepan over medium-high heat.

2. Bring the mixture to a boil, then reduce the heat and simmer for 10 to 15 minutes until the liquid reduces and darkens.

3. Pour in the 2 cups ice-cold water and let the tea simmer again for 5 minutes.

4. Strain the tea concentrate into a clean saucepan, discarding the leaves and cardamom pods.

5. Add the whole milk and place the pan over low heat.

6. Stir in the salt and sugar, then heat gently for 5 to 7 minutes until hot and lightly frothy.

7. Pour into serving cups and garnish with chopped pistachios and chopped almonds before serving.

Notes

Use whole milk for the creamiest texture and the prettiest pink color.

Do not rush the simmering step because the tea concentrate needs time to deepen in flavor and develop its classic rosy hue.
