Ingredients
1 lb ground beef
1 small yellow onion, diced
3 cloves garlic, minced
1 packet taco seasoning
1/4 cup water
2 cups cooked white rice
1 cup refried beans
1 can diced green chiles, 4 oz
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
6 large flour tortillas
2 cups red enchilada sauce
1/2 cup sour cream
2 tbsp fresh cilantro, chopped
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain excess grease.
3. Stir in the garlic, taco seasoning, and water. Cook for 1 minute until fragrant.
4. Add the cooked rice, refried beans, and diced green chiles. Stir until the filling is heated through and fully combined.
5. Mix in 1/2 cup cheddar cheese and 1/2 cup Monterey Jack cheese until melted into the filling.
6. Spoon the beef mixture evenly into the flour tortillas, roll them tightly, and place seam-side down in the prepared baking dish.
7. Pour the enchilada sauce evenly over the burritos.
8. Sprinkle the remaining cheddar and Monterey Jack cheese over the top.
9. Bake for 20 to 25 minutes until the cheese is melted and the sauce is bubbling.
10. Let the burritos rest for 5 minutes, then top with sour cream and chopped cilantro before serving.
Notes
Do not overfill the tortillas, or they can split while rolling and turn soggy once the sauce is added.
