Ingredients

2 pounds beef chuck, cut into 1 1/2-inch cubes

1 1/2 teaspoons salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

2 tablespoons olive oil

1 medium yellow onion, finely chopped

3 cloves garlic, minced

3 cups beef broth

1 tablespoon Worcestershire sauce

2 tablespoons tomato paste

2 tablespoons cornstarch

3 tablespoons water

1 tablespoon butter

2 tablespoons fresh parsley, chopped


Instructions

1. Pat the beef dry with paper towels, then season it with salt, black pepper, garlic powder, and onion powder.

2. Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat.

3. Brown the beef in batches, making sure not to overcrowd the pan. Transfer the browned beef to a plate.

4. Reduce the heat to medium and add the chopped onion. Cook for 4 to 5 minutes until softened.

5. Stir in the minced garlic and tomato paste and cook for 1 minute.

6. Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pot.

7. Return the beef to the pot and bring the mixture to a gentle simmer.

8. Cover and cook on low heat for 1 1/2 to 2 hours, stirring occasionally, until the beef is very tender.

9. In a small bowl, stir together the cornstarch and water until smooth.

10. Add the cornstarch slurry to the pot and simmer uncovered for 3 to 5 minutes until the gravy thickens.

11. Stir in the butter until melted and glossy.

12. Sprinkle with fresh parsley and serve hot over mashed potatoes, rice, or egg noodles.

Notes

For the best texture, sear the beef in batches so each piece browns properly instead of steaming.

If the gravy thickens too much while reheating, stir in a small splash of beef broth until it loosens up again.
