Ingredients

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can diced tomatoes with green chiles, 10 ounces

1 can black beans, drained and rinsed, 15 ounces

1 cup corn kernels

1 cup salsa

1/2 cup sour cream

6 medium flour tortillas

2 cups shredded cheddar cheese

2 cups shredded Monterey Jack cheese

1 cup diced tomatoes

1/4 cup sliced green onions


Instructions

1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.

2. Cook the ground beef and diced onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain excess grease.

3. Stir in the garlic and taco seasoning and cook for 30 seconds.

4. Add the diced tomatoes with green chiles, black beans, corn, and salsa. Simmer for 5 minutes.

5. Lower the heat and stir in the sour cream until the filling is creamy and well combined.

6. Spread a small amount of the beef mixture into the bottom of the baking dish.

7. Layer 2 tortillas over the filling, overlapping as needed.

8. Spoon over one-third of the beef mixture and sprinkle with one-third of the cheddar and Monterey Jack cheese.

9. Repeat the layers two more times, ending with cheese on top.

10. Bake for 25 to 30 minutes, until the cheese is melted and the casserole is bubbling around the edges.

11. Let the casserole rest for 10 minutes.

12. Top with diced tomatoes and green onions before serving.

Notes

Let the casserole rest before slicing so the layers hold together better.

For extra heat, use hot salsa or add sliced jalapeños to the beef mixture.
