Ingredients

1 1/2 cups oat cookie crumbs

4 tablespoons butter, melted

2 tablespoons brown sugar

3/4 cup granulated sugar

1/2 cup brown sugar

1/4 cup milk powder

1 tablespoon cornstarch

1/4 teaspoon salt

1/2 cup butter, melted

1/3 cup heavy cream

1 teaspoon vanilla extract

4 egg yolks

powdered sugar, for dusting


Instructions

1. Preheat the oven to 350°F and lightly grease a 9-inch pie dish.

2. In a bowl, mix the oat cookie crumbs, 4 tablespoons melted butter, and 2 tablespoons brown sugar until the mixture looks like wet sand.

3. Press the crust mixture firmly into the bottom and up the sides of the pie dish.

4. Bake the crust for 8 to 10 minutes, then let it cool slightly.

5. In a large bowl, whisk together the granulated sugar, 1/2 cup brown sugar, milk powder, cornstarch, and salt.

6. Add 1/2 cup melted butter, heavy cream, vanilla extract, and egg yolks. Whisk until completely smooth.

7. Pour the filling into the prepared crust.

8. Bake for 30 to 35 minutes, until the edges are set and the center still has a slight jiggle.

9. Let the pie cool to room temperature.

10. Refrigerate for at least 4 hours or overnight until fully chilled and set.

11. Dust with powdered sugar before slicing and serving.

Notes

For the best texture, do not overbake the pie. The center should still wobble slightly when it comes out of the oven.

Chilling overnight gives the filling its signature dense and silky texture, and it also makes the pie much easier to slice cleanly.
