Ingredients

2 1/2 pounds chicken thighs or drumsticks

1 packet ranch seasoning mix

1 packet au jus gravy mix

1/2 cup unsalted butter

6 pepperoncini peppers

1/4 cup pepperoncini juice

4 cloves garlic, minced

1 small yellow onion, sliced

1/2 cup chicken broth

1 tablespoon cornstarch

2 tablespoons water

2 tablespoons chopped parsley


Instructions

1. Arrange the chicken in the slow cooker or a heavy lidded pot in an even layer. Scatter the sliced onion and minced garlic over the top.

2. Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the chicken.

3. Place the butter over the seasoned chicken, then add the pepperoncini peppers and pour in the pepperoncini juice.

4. Pour the chicken broth around the sides of the pot. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through.

5. Leave the chicken whole or shred part of it into the sauce, depending on how you want to serve it.

6. In a small bowl, stir together the cornstarch and water. Mix it into the sauce and let it cook for 5 to 10 more minutes until slightly thickened, if desired.

7. Sprinkle with chopped parsley and serve hot over mashed potatoes, rice, or buttered noodles.

Notes

Use chicken thighs for the juiciest texture because they stay tender and flavorful during the long cooking time.

Do not skip the pepperoncini juice because it balances the rich butter and gravy with the tangy flavor that makes this dish stand out.
