Ingredients
12 ounces smoked sausage, sliced into rounds
12 ounces penne pasta
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
1 can diced tomatoes, 14.5 ounces, drained
1 teaspoon Italian seasoning
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup parmesan cheese, finely grated
2 tablespoons fresh parsley, chopped
Instructions
1. Heat the olive oil in a large deep skillet or Dutch oven over medium heat. Add the sliced smoked sausage and cook for 4 to 5 minutes until browned on both sides.
2. Add the diced onion and cook for 2 to 3 minutes until softened. Stir in the minced garlic and cook for 30 seconds.
3. Pour in the chicken broth and heavy cream. Add the drained diced tomatoes, penne pasta, Italian seasoning, paprika, salt, and black pepper. Stir well.
4. Bring everything to a gentle boil, then reduce the heat to medium-low. Cover and simmer for 14 to 16 minutes, stirring a few times, until the pasta is tender and most of the liquid has thickened into a sauce.
5. Stir in the grated parmesan cheese until melted and creamy.
6. Sprinkle with fresh parsley and serve hot with extra parmesan if desired.
Notes
Stir the pasta a few times while it simmers so it cooks evenly and does not stick to the bottom of the pot.
If the sauce thickens too much after resting, add a small splash of broth or cream before serving or reheating.
