Ingredients
1/2 cup rolled oats
1/2 cup milk
1/3 cup plain Greek yogurt
1/2 cup diced peaches
1 tablespoon chia seeds
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 pinch salt
2 tablespoons extra diced peaches for topping
Instructions
1. Add the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, ground cinnamon, and salt to a mason jar or bowl. Stir until fully combined.
2. Fold in the diced peaches, reserving a little for topping if desired.
3. Cover and refrigerate for at least 4 hours, or overnight, until the oats are soft and creamy.
4. Stir the oats in the morning. Add a small splash of milk if you want a looser texture.
5. Top with extra diced peaches and a light sprinkle of cinnamon, then serve cold.
Notes
Use ripe peaches for the best natural sweetness and cobbler-like flavor.
Stir in the topping peaches right before serving if you want the freshest texture.
