Ingredients

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup light brown sugar, packed

1/4 cup granulated sugar, for rolling

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt


Instructions

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. In a large bowl, beat the peanut butter, softened butter, 1/2 cup granulated sugar, and brown sugar until creamy and fluffy.

3. Add the egg and vanilla extract, then mix until smooth.

4. Stir in the flour, baking soda, baking powder, and salt until a soft dough forms.

5. Scoop the dough into evenly sized balls.

6. Roll each dough ball in the remaining 1/4 cup granulated sugar.

7. Arrange the dough balls on the prepared baking sheet, leaving space between them.

8. Flatten each ball gently with a fork in one direction, then again in the opposite direction to create the crisscross pattern.

9. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are just set.

10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For the best texture, do not overmix the dough once the flour goes in. Mixing just until combined keeps the cookies tender.

For softer cookies, pull them from the oven when the centers still look slightly underdone. They will finish setting as they cool.
