Description

These quick and easy Mediterranean chicken skewers are the kind of dinner that makes an ordinary weeknight feel exciting. Juicy chunks of chicken are marinated in olive oil, lemon juice, garlic, and warm spices, then cooked until lightly charred and served with a cool, creamy yogurt sauce. Ingredients

1 1/2 pounds chicken breast

3 tablespoons olive oil

2 tablespoons lemon juice

3 cloves garlic, minced

2 teaspoons paprika

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

1 cup Greek yogurt

1/2 cucumber, grated and squeezed dry

1 tablespoon fresh dill, chopped

1 tablespoon fresh mint, chopped

1 small garlic clove, minced

1 tablespoon lemon juice

1/4 teaspoon salt

4 pita breads

Lemon wedges for serving


Instructions

1. Cut the chicken breast into even bite-sized chunks and place them in a large bowl.

2. Add olive oil, lemon juice, minced garlic, paprika, oregano, cumin, salt, and black pepper. Toss until the chicken is fully coated.

3. Cover and marinate for 20 to 30 minutes.

4. If using wooden skewers, soak them in water while the chicken marinates.

5. In a separate bowl, mix Greek yogurt, grated cucumber, dill, mint, minced garlic, lemon juice, and salt until smooth. Refrigerate until ready to serve.

6. Thread the marinated chicken onto skewers, leaving a little space between each piece.

7. Grill over medium-high heat for 10 to 12 minutes, turning occasionally, until the chicken is cooked through and lightly charred. You can also bake at 425°F for 15 to 18 minutes and broil briefly for extra color.

8. Warm the pita bread if desired.

9. Serve the skewers hot with yogurt sauce, pita bread, and lemon wedges.

Notes

For the juiciest chicken, cut the pieces to a similar size so they cook evenly and stay tender.

If you want stronger flavor, let the chicken marinate for up to 2 hours in the fridge before cooking.
