Ingredients

4 boneless skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

2 tablespoons olive oil

2 tablespoons butter

5 cloves garlic, minced

1 1/2 cups chicken broth

1 cup heavy cream

1 teaspoon Italian seasoning

2 tablespoons chopped fresh parsley

2 pounds russet or Yukon Gold potatoes, peeled and chopped

1/2 cup milk or half-and-half

4 tablespoons butter

1/2 teaspoon salt for the potatoes

1/4 teaspoon black pepper for the potatoes


Instructions

1. Add the peeled and chopped potatoes to a large pot of cold salted water and bring to a boil. Cook for 15 to 18 minutes, or until fork tender.

2. While the potatoes cook, pat the chicken dry and season both sides with salt, black pepper, and garlic powder.

3. Heat the olive oil in a large skillet over medium heat. Add the chicken and sear for 5 to 6 minutes per side, until golden and nearly cooked through. Transfer to a plate.

4. In the same skillet, melt 2 tablespoons of butter. Add the minced garlic and cook for 30 seconds, just until fragrant.

5. Pour in the chicken broth and scrape up the browned bits from the bottom of the skillet. Stir in the heavy cream and Italian seasoning. Simmer for 4 to 5 minutes, until slightly thickened.

6. Return the chicken to the skillet and spoon the sauce over the top. Simmer for 5 more minutes, or until the chicken is fully cooked through.

7. Drain the potatoes and mash them with the milk or half-and-half, 4 tablespoons butter, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth and creamy.

8. Serve the mashed potatoes on plates, top with the saucy herb and garlic chicken, and finish with chopped fresh parsley.

Notes

Use evenly sized chicken breasts or slice large ones in half so they cook at the same rate and stay juicy.

If the sauce thickens too much while simmering, stir in a splash of chicken broth or cream before serving.
