Ingredients

8 slices of sandwich bread (white or brioche)

8 fully cooked breakfast sausage links

2 large eggs

½ cup whole milk

1 tsp vanilla extract

½ tsp ground cinnamon

Pinch of salt

2 tbsp butter, for frying

Maple syrup, for serving

Optional: powdered sugar and fresh fruit for garnish


Instructions

  1. Trim the crusts off each bread slice and flatten with a rolling pin.
  2. Place a sausage link at the edge of each slice and roll tightly. Seal the edge with a little egg wash if needed.
  3. In a bowl, whisk eggs, milk, vanilla, cinnamon, and salt until combined.
  4. Heat butter in a non-stick skillet over medium heat.
  5. Dip each roll-up into the egg mixture and place seam-side down in the skillet.
  6. Cook until golden brown on all sides, about 5-7 minutes total.
