Ingredients

1 cup unsalted butter, softened

1 cup creamy peanut butter

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup marshmallow creme

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups peanut butter chips


Instructions

1. Preheat the oven to 350°F and line baking sheets with parchment paper.

2. In a large bowl, beat the butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.

3. Add the eggs and vanilla extract, then mix until smooth.

4. Fold in the marshmallow creme until mostly combined.

5. In a separate bowl, whisk together the flour, baking soda, and salt.

6. Gradually add the dry ingredients to the wet ingredients and mix just until combined.

7. Stir in the peanut butter chips.

8. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

9. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are still soft.

10. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overbake these cookies or the marshmallow pockets can lose that soft gooey texture. Pull them from the oven when the edges are set and the centers still look slightly underdone.
