Ingredients

2 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

1 large egg

1 large egg yolk

2 teaspoons vanilla extract

1/4 cup granulated sugar for rolling


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.

3. In a large bowl, beat the softened butter and 1 1/2 cups granulated sugar until light and fluffy.

4. Mix in the egg, egg yolk, and vanilla extract until smooth and fully combined.

5. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.

6. Scoop the dough into 1 1/2 tablespoon portions and roll each portion into a ball.

7. Roll each dough ball in the remaining 1/4 cup granulated sugar.

8. Place the dough balls on the prepared baking sheets about 2 inches apart.

9. Bake for 9 to 11 minutes, until the edges are set and the tops are lightly crackled while the centers still look soft.

10. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Do not overbake these cookies. Pull them from the oven when the centers still look slightly soft so they stay chewy after cooling.

For thicker cookies, chill the dough for 20 to 30 minutes before baking.
